Shelley and Todd Simmons are opening a new restaurant at 100 East University St. in downtown Siloam Springs.
28 Springs will fill the spot vacated Jan. 29 by Emelia’s, owned by Sarah Lusher and her husband George Ouyoumjian. The couple also owns an Emelia’s in downtown Fayetteville that remains open.
28 Springs is set to open in late April or early May.
The Simmons are leasing the building from Historic Restoration Partners of Siloam Springs.
28 Springs is named after the 28 springs that make up Sager Creek.
Chef Miles James is creating the menu that will feature locally sourced ingredients and include many options from burgers and sandwiches to James signature Ozark Plateau Cuisine style.
James is owner of James at the Mill in Johnson.
The historic Crain Motor Company building is undergo renovations including an open kitchen concept and removing the dropped ceiling to expose the beams. The interior will also feature historic photos of Siloam Springs.
The Simmons plan have between 12 and 15 employees.
